Chocolate Coconut Icing

This is the icing I used on my first batch of Nutty-Seed Cupcakes … or Bites (from the book Thrive Energy Cookbook):


  • 6 large Medjool dates, pitted and soaked
  • ¾ cup water
  • ¼ cup raw cacao powder
  • ¼ cup virgin coconut oil


  1. Combine all ingredients in a blender.
  2. Blend until creamy.
  3. Refrigerate until thick enough to spread, if necessary.
