This is the icing I used on my first batch of Nutty-Seed Cupcakes … or Bites (from the book Thrive Energy Cookbook):
- 6 large Medjool dates, pitted and soaked
- ¾ cup water
- ¼ cup raw cacao powder
- ¼ cup virgin coconut oil
- Combine all ingredients in a blender.
- Blend until creamy.
- Refrigerate until thick enough to spread, if necessary.
